Brooklyn’s Patisserie Colson is the New York manifestation of Hubert Colson’s beloved establishment of the same name in Mons, Belgium. Hubert’s confectionery and culinary creations have brought sweetness and smiles to countless people over twenty years since its creation in 1986.

Hubert is the author of four cookbooks and is one of Belgium’s most important culinary ambassadors. It is with this same romantic ambition that Parisian born filmmaker Yonatan Israel opened New York’s outpost of this beloved bakery, the place he trained with Hubert and his team. Hubert, Yonatan and staff are dedicated to continuing the tradition of Patisserie Colson – serving the best possible products made with love and the best ingredients available.
